The first mill that can grind frozen fruits and vegetables will be demonstrated at the Food Pilot on the 28th of April, 2015. The Corundum stone mill, produced by Machinenbau Kaltenbach GmbH (http://www.kma-process.de/home.php) is unique as it can grind frozen fruits and vegetables into small particles (<50 µm) and homogenise in one step, with an option of cooking in the same process. This results in a puree with a superior taste, colour and odour. By skipping the thawing step, this frozen food mill also saves time and space. It can be used during processing of soups and sauces, jams, juices, dairy desserts and take-away meals. Examples are the production of strawberry jam (including milling the seeds without any off-flavour), the preparation of cauliflower, broccoli, carrot or beetroot puree with an excellent colour and taste, or preparation of fresh-tasting cherry or raspberry smoothies or coulis.

This practical workshop, organised by the Food Pilot and Gillain & Co, will take place at the Food Pilot in Melle, Belgium on the 28th of April, 2015. The technique will be explained in depth, together with a demonstration of processing various types of fruits and vegetables. If you want to see a demonstration of a certain fruit or vegetable, just let us know when you register.The workshop ends with a discussion of the advantages and benefits of the technology and the product results. As well will be discussed which new application fields of final products are opened up by this technology of raw material preparation.
